There's lots of ways to process XML. xmlstar is a useful tool, you can use XSLT to do transform to human data if you want - there's some examples in the xml/ directory in the kismet source.

XPath is also your friend for extracting data.

XML is a data format, not a directly human readable format - it's meant to be programatically processed.
