I thought of that, but that's not the problem either -- when I comment out the piddir variable Kismet warns me that I need to define piddir; when I uncomment it I get the previous error ("/kismet_server.pid ...").

So I know it's reading the file that I'm editing; it's just not taking my changes for some reason ...
