Newcore is much easier to gut or replace, but at the level you're looking for you'd be better off rolling your own. All that info is in the radiotap or prism2 headers, you can just parse them out. Probably no more than a few hundred lines of C code to do what you need.

I don't know of anything prepackaged to do this already, but you MAY be able to do something with tcpdump or tethereal and a bash script, even.
